Cookie Dough Protein Fudge Balls
First of all, these are the best of both worlds because you have cookie dough in the form of fudge with loads of protein. Then, dipped in melted Hu Kitchen chocolate gems. I don't think it could get any better than this! I mean, come on, who doesn't like cookie dough or fudge!?
I love having some sweet treats around the house that are healthy because it makes me less tempted to buy things from the store. Not only that but it helps me to get my creative juices flowing!
When baking or cooking, I try and keep the sugar to a minimum and use only a few ingredients when creating my recipes. The ones I usually go to are:
Blackstrap molasses
Wild, organic honey
Organic maple syrup
Organic, coconut sugar
What is great about Hu Kitchen chocolate is that they are vegan and gluten free. They are also FREE of:
- Cane sugar
- Refined sugars
- Sugar alcohols
- Processed oils
- Emulsifiers
- Soy lecithin
These really do go a long way so you could even do half 70% and half 100% if you want it to be less sweet. Notice that I did not add any sugar into the actual cookie dough. This chocolate is plenty sweet and you do not need to add any other form of sugar unless you really want to.
Also, when looking for chocolate to use, you want to be sure to look at the ingredients to see what exactly in it. Most contain dairy, soy lecithin, cane sugar, palm oil, stevia, or other alcohol that can be pretty disruptive to the gut flora. There could also be a section right below called "other ingredients" that can contain ingredients to look out for. Hu Kitchen's only ingredients are: organic cacao, unrefined organic coconut sugar, and organic cocoa butter.
If you are suffering with Candida, SIBO, other gut issues, you may need to stay away from sugar altogether. If that is the case, stick with 100% chocolate. This will ensure that there is no added sugar.
Cookie Dough Protein Fudge Balls
Serving size: about 25
Ingredients:
1 cup almond flour (or tigernut flour for AIP)
60g chocolate chips
1 tbsp coconut oil
1 tbsp Trader Joes mixed nut butter or any nut butter of your choice
4-5 tbsp coconut flour
1/4 cup Three Trees almond milk
6-7 scoops of collagen
1-2 tsp cinnamon
Sea salt
Directions:
First, combine the flours, cinnamon, and collagen powder together until it is well combined.
Melt the coconut oil and add to the dry mixture. Then, add in the almond milk and nut butter.
Using a small scooper, scoop out the cookie dough fudge into small balls and place on parchment paper. Put them in the freezer for about 30 minutes or until firm.
When they are hardened, melt the chocolate over a double broiler or in a small sauce pan.
Dip each fudge ball in the chocolate and sprinkle with sea salt.
Place back into the freezer to harden.
