Gut Healing Blueberry & Lemon Gummies
These gut healing gummies are exactly what you need in your day! They are perfect for on the go snacks or just to pop in your mouth for a sweet alternative.
I’ve been on a baking/cooking kick lately to where I want to cook ALL the time! Once I try one type of food, I want to try it again but with every flavor possible! When buying your ingredients, it is important to buy the purest and best quality. Buying organic blueberries and lemons are going to give your the best flavors without all the pesticides and chemicals. I personally like to buy organic frozen blueberries for multiple reasons.
1. They stay fresh longer
2. Don’t have to worry about them being in season & spending a fortune
3. They are flash frozen right from the get go
It is hard finding organic blueberries when they are not in season in stores without spending $10 for a package. I don’t know about you but they are just not that worth it to me. I buy mine from HEB in the frozen section. It is about $7 for a big bag or organic blueberries. This bag lasts me forever and will stay fresh for months!
Also, buying organic lemons is huge too! You can also buy these at HEB in a bag in the organic section. They usually run about $3-$4 a bag. When getting all your lemon juice, you want to make sure you get all the seeds out before adding it to the mixture. I have such a hard time finding lemons with very few seeds. I normally squeeze the juice into a container first and then scoop out all the seeds so I can see them and make sure none are left. This is a lot of lemon juice so depending on your taste buds and how tart you like your food, you can decrease the amount a little if you choose. However, the stevia should balance that out a little bit.
Also, stevia is an option but I definitely think these will taste better with it added in. I personally like to add it to mine to balance out the tartness from the lemon juice and to make it taste more like candy. However, that it completely up to you! I prefer stevia than refined sugar because it does not spike the blood levels and it is much sweeter than sugar.
Lastly, the Vital Protein Beef Gelatin is the key ingredient to this entire recipe! I absolutely love adding gelatin to many things like my coffee but using it to make these gummies are the bomb! What I love about Vital Proteins is that they they are a grass fed product so I can feel good about the quality of the gelatin.
**If you are vegan or vegetarian, then you will not want to use this product**

GUT HEALING BLUEBERRY & LEMON GUMMIES
PREP TIME: 5 MINUTES
COOK TIME: 1 HOUR
TOTAL TIME: 1 HOUR, 5 MINUTES
SERVING SIZE: 1 GUMMY (45 GUMMIES TOTAL)
Ingredients:
1 cup frozen or fresh organic blueberries (I used frozen with no sugar added)
1/4 cup water
2/3 cup fresh squeezed lemon juice
5-10 drops of liquid stevia
1/4 cup Vital Proteins beef gelatin
Directions:
1. The first thing you want to do is combine the blueberries, water, and lemon juice in a saucepan over medium heat. Continue to stir the mixture until heated through thoroughly and blueberries are mixed well.
2. Once it is combined well, pour the mixture into a food processor or handheld blender and blend until smooth. when the mixture is at the consistency you like, remove the lid and allow to cool for a minute or two.
3. Add the gelatin to the mixture and blend again until combined well.
4. Pour the mixture into silicon candy molds or a 8×8 baking dish. Place the molds or dish into the refrigerator and let is cool for about 2 hours.If using a candy mold, just simply push the gummies out of the mold.
5. If using a baking dish, cut the gelatin mixture to the sizes you prefer and store in a sealed tight container for about a week in the refrigerator. I cut the mixture into smaller sizes to make about 45 gummies.
**The more gelatin you add, the firmer the gummies become. If you want, you can probably get away with only adding 3 Tbsp of gelatin rather than 4 Tbsp (1/4 cup)**
