Hemp Seed Tabbouleh

You will never want to go back to the old version after trying this amazing alternative! Traditionally, tabbouleh is a Mediterranean entree that consists of bulgur wheat. In this case, we replace the bulgur with hemp hearts, which is high in protein and health fats! For those who deal with IBS, Celiac, Candida, and other gut inflammatory diseases, this is such a great alternative to get in your veggies, protein, and healthy fats! What is even more amazing is that it will satisfy you for HOURS and will not be craving that afternoon snack.

SERVING SIZE:  5 SERVINGS

Ingredients:

1 cup chopped red bell pepper

1 cup hemp hearts

2 cups chopped peeled cucumber

1/2 cup fresh chopped parsley

1/2 cup fresh chopped mint

1/2 cup fresh chopped cilantro

Zest of 1 1/2 lemon

Juice of 1 1/2 lemons

2 1/2 Tbsp avocado oil

1 tsp Celtic sea salt

pinch of pepper

Optional: 1/2 cup red onion, diced

Directions:

Chop all ingredients and put into bowl and toss until well combined.

ENJOY!

Tips:

More fat? You can add 1/4 avocado.

Want more protein? Add 2oz grilled chicken or protein of choice.
