Homemade Italian Crackers

Who doesn’t love crackers? I could literally eat the ENTIRE box if I let myself. Self control is hard for me when it comes to chips and crackers especially when I have some guacamole in front of me!! Am I right? As I was reading The Plant Paradox, he mentioned making these crackers as one of your snacks for the day. I said to myself, ” I get to eat crackers for a snack? Count me in!”


Processed food these days will almost always contain gluten, dairy, sugar, and many other ingredients that you can’t read! Who wants to put that crap in our bodies when it is this easy to make your own food? Not I! Don’t get me wrong, I’m sure all that junk they add into the food makes them pretty tasty but THAT is the point! The ingredients they add trick your mind into thinking these are amazing so why not eat more!? Why do you always catch yourself eating almost the entire bag of chips, cookies or crackers?

These homemade Italian Seasoned Crackers will let you feel guilt free while enjoying what you are eating at the same time. These crackers are made from almond and coconut flour which is such a great alternative to white or whole wheat flour. Almond flour is great because has levels of Vitamin E, manganese, and magnesium. Coconut flour is also a great choice because it has sources of iron, manganese, and copper! Plus, both taste amazing!

I do use eggs to combine the flours together. However, you could replace with Vegan egg or any other egg alternative.

HOMEMADE ITALIAN CRACKERS

PREP TIME: 10 MINUTES

COOK TIME: 18 MINUTES

TOTAL TIME: 28 MINUTES

SERVING SIZE: 16-24 (DEPENDING ON SIZE)

Ingredients:

1 cup Almond Flour

1/2 cup Coconut Flour

1 tsp Italian seasoning

1/2 tsp salt

2 pasture raised eggs

1 tsp water

Directions:

1. Preheat oven to 350 degrees

2. Combine eggs and water in a small bowl and whisk until well blended. In a large bowl, combine almond and coconut flour, salt, and Italian seasoning. Make sure it is combined well

3. Pour egg and water mixture into the large bowl. Use a spoon or hands to combine all the ingredients together

4. Roll dough into quarter size balls. Press dough down on baking pan until 1/4 inch thick

5. Continue the process until all the dough has been used

6. Bake at 350 degrees for 18 minutes. May take a few minutes longer depending how thick your crackers areTake crackers out of the oven and place on rack to cool

7. Enjoy by itself or with some guacamole!


**If you can’t have eggs follow instructions on the container of VeganEgg, NeatEgg or mix 1 Tbsp of ground flax with 3 Tbsp of water.**

I have found both VeganEgg and NeatEgg at Natural Grocers, Sprouts, and Whole Foods. I have not checked HEB but I am sure they would be there as well.
